What’s in Your Green Tea?

Green tea, prized for many generations in China, Japan and even Britain, has made a name for itself in the US, where many now drink it daily due to its many associated health benefits.

However, while green tea is recognized as an abundant source of epigallocatechin-3-gallate (EGCG), a catechin polyphenol, and other antioxidants, not all green teas are created equal.

If you’re drinking green tea hoping to increase your antioxidant levels, you should know that some green tea brands contain very little antioxidants, while others may contain significant amounts of lead.

One Variety of Tea Tested Contained Almost No EGCG

EGCG is easily the most talked-about green tea compound. As one of the most powerful antioxidants known, the health benefits of EGCG include a lower risk of heart attack and stroke, glaucoma, high cholesterol and more. Several studies have also found that EGCG can improve exercise performance, increase fat oxidation, and may help prevent obesity, as it’s known to have a regulatory effect on fat metabolism.

If you drink green tea, you probably assume you’re getting a healthful dose of EGCG with each cup, but new research shows that’s not necessarily the case. An analysis of the strength and purity of more than 20 green tea products by ConsumerLab.com found that EGCG levels in bottled green tea can range from just 4 milligrams (mg) per cup to 47 mg, while brewable green tea (from tea bags, loose tea or a K-cup) contained levels ranging from 25 mg to 86 mg per serving.1

One variety, bottled Diet Snapple Green Tea, reportedly contained almost no EGCG, while Honest Tea Green Tea with Honey contained only about 60 percent of the 190 mg of catechins claimed on the label.2 Added sugars or artificial sweeteners were also common in the bottled tea brands.

This Type of Green Tea Contained the Most Antioxidants

Green tea brewed from loose tea leaves appeared to offer the most potent source of antioxidants like EGCG. One variety, Teavana contained 250 mg of catechins per serving; green tea sold in bags from brands like Lipton and Bigelow contained lower levels, although represented a more cost-effective alternative.

The different tea brands also varied significantly in the amount of caffeine the products contained. While some contained virtually none, others contained 86 mg per serving, which is similar to the amount of caffeine in a regular cup of coffee.

One green tea supplement even contained 130 mg of caffeine in a single capsule, which is more than is found in a cup of coffee! But higher antioxidant levels is only one reason why you may want to choose loose tea over bags…

Some Tea Bags May Leach Hazardous Compounds Into Your Tea

Some tea bags are made with synthetic polymers, such as nylon, thermoplastic, PVC or polypropylene. While these compounds have high melting points, the temperature at which the molecules in polymers begin to break down is always lower than the melting point, which could allow the bags to leach compounds of unknown health hazards into your tea when steeped in boiling water.

Paper tea bags are also potentially problematic, as they are frequently treated with epichlorohydrin, which hydrolyzes to 3-MCPD when contact with water occurs. 3-MCPD is a carcinogen associated with food processing that has also been implicated in infertility and suppressed immune function. I recommend purchasing tea from manufacturers who can certify that their tea bags do not contain epichlorohydrin, and avoid plastic tea bags. Alternatively, you can opt for loose tea instead.

Why Your Green Tea Should Come From Japan, Not China

Green tea plants are known to be especially effective at absorbing lead from the soil, which is then taken up into the plant’s leaves. Areas with excessive industrial pollution, such as China (where nearly 90% of the world’s green tea is produced),3 may therefore contain substantial amounts of lead.4

According to the ConsumerLab.com analysis, tea from brands like Lipton and Bigelow contained up to 2.5 micrograms of lead per serving compared to no measurable amounts in Teavana brand, which gets its tea leaves from Japan.

While the lead in the tea leaves is not thought to leach very effectively into the tea you end up drinking, if you’re consuming Matcha green tea, one of my favorites, it’s especially important that it comes from Japan instead of China. Matcha tea contains the entire ground tea leaf, and can contain over 100 times the EGCG provided from regular brewed green tea.

That said, because you’re consuming the entire leaf, you want to be sure it comes from a non-polluted, high-quality source. The best Matcha green tea comes from Japan and is steamed, rather than roasted or pan-fried. As a result, Matcha green tea retains all the nutrient-rich value possible from the tea leaf, without additives or contaminants.

A Word of Warning About Fluoride in Tea

Both black and green teas are naturally high in fluoride, even if organically grown without pesticides. This is because the plant readily absorbs fluoride thorough its root system, including naturally-occurring fluoride in the soil. According to fluoride expert Jeff Green, there are reports of people who have developed crippling skeletal fluorosis from drinking high amounts of iced tea alone.5

If you live in an area with fluoridated drinking water, as the majority of Americans do, then you could be getting a double dose of fluoride when you drink tea. When selecting tea of any kind, it should preferably be organic (to avoid pesticides) and grown in a pristine environment because, as mentioned, tea is known to accumulate fluoride, heavy metals and other toxins from soil and water, so a clean growing environment is essential to producing a pure, high-quality tea.

What Does the Research Say About Drinking Tea?

Although I still believe pure water should make up the majority of your daily fluid intake, high-quality tea has numerous health benefits to offer, which vary by type. In addition to Matcha tea, I personally enjoy Tulsi tea (aka Holy Basil tea), which is a powerful adaptogenic herb that provides important therapeutic benefits. There is also growing evidence that the polyphenols in tea, including EGCG and many others, may be protective against cancer. Beyond this, the beneficial properties in tea have been known to:

  • Neutralize the effects to your body of harmful fats and oils
  • Inhibit bacteria and viruses
  • Improve digestion
  • Protect against oxidation in your brain and liver
  • Help promote healthy gums

Drinking tea has also been linked to:

  • Improved mental alertness and slowing of brain-cell degeneration
  • Reduced blood pressure
  • Protection against type 2 diabetes
  • Lower blood cholesterol and triglyceride levels
  • Lower risk of breast, colon, lung, ovarian and prostate cancers
  • Reduced risk of heart attack and stroke

How to Brew the Perfect Cup of Loose-Leaf Tea

Choosing high-quality tea is extremely important. As the ConsumerLab.com analysis showed, the type of tea you purchase can make all the difference in the amount of beneficial antioxidants it contains, with loose-leaf teas appearing to provide the most. There is an art to brewing tea using loose tea leaves, but once you find your “sweet spot” you may never go back to bagged tea again. Here are a few simple guidelines for making the “perfect” cup of tea:

  • Bring water to a boil in a tea kettle (avoid using a non-stick pot, as this can release harmful chemicals when heated)
  • Preheat your teapot or cup to prevent the water from cooling too quickly when transferred. Simply add a small amount of boiling water to the pot or tea up that you’re going to steep the tea in. Ceramic and porcelain retain heat well. Then cover the pot or cup with a lid. Add a tea cozy if you have one, or drape with a towel. Let stand until warm, then pour out the water
  • Put the tea into an infuser, strainer, or add loose into the tea pot. Steeping without an infuser or strainer will produce a more flavorful tea. Start with one heaped teaspoon per cup of tea, or follow the instructions on the tea package. The robustness of the flavor can be tweaked by using more or less tea
  • Add boiling water. Use the correct amount for the amount of tea you added (i.e. for four teaspoons of tea, add four cups of water). The ideal water temperature varies based on the type of tea being steeped:
    – White or green teas (full leaf): Well below boiling (170-185°F or 76-85°C). Once the water has been brought to a boil, remove from heat and let the water cool for about 30 seconds for white tea and 60 seconds for            green tea before pouring it over the leaves
    – Oolongs (full leaf): 185-210°F or 85-98°C
    – Black teas (full leaf) and Pu-erhs: Full rolling boil (212°F or 100°C)
  • Cover the pot with a cozy or towel and let steep. Follow steeping instructions on the package. If there are none, here are some general steeping guidelines. Taste frequently as you want it to be flavorful but not bitter:
    – Oolong teas: 4-7 minutes
    – Black teas: 3-5 minutes
    – Green teas: 2-3 minutes
  • Once the desired flavor has been achieved you need to remove the strainer or infuser. If you’re using loose leaves, pour the tea through a strainer into your cup and any leftover into another vessel (cover with a cozy to retain the heat)

  2. Transfer the mixture to a Mason jar.
  3. Pour in some apple cider vinegar and fill it to the top. It is best if 2/3 of the jar consist of dry ingredients, and fill in the rest with vinegar.
  4. Close well and shake.
  5. Keep the jar in a cool and dry place for 2 weeks. Shake well several times a day.
  6. After 14 days, squeeze well and strain the liquid through a plastic strain. For better results put a gauze over it. Squeeze well so the whole juice comes out.
  7. Use the rest of the dry mixture when cooking.

Your master tonic is ready for use. You do not need to keep the tonic in your fridge. It will last for long.

Extra Tip: You can also use it in the kitchen – mix it with some olive oil and use it as a salad dressing or in your stews.

Dosing:

  • Caution: The flavor is very strong and hot!
  • Extra Tip: Eat a slice of orange, lemon or lime after you take the tonic to ease the burning sensation and heat.
  • Gargle and swallow.
  • Do not dilute it in water as it will reduce the effect.
  • Take 1 tablespoon every day to strengthen the immune system and fight cold.

10 Tips To Juice Like A Pro (From Someone Who’s Been Doing It For 30 Years)

My name is Jimmy Rosenberg, and I’m the founder and Chief Juice Officer of Evolution Fresh. I started my first juice company in California in 1984, selling fresh juice to beachgoers on Venice Beach. A decade later, I worked as an organic bibb lettuce farmer, learning the nuances of farming and harvesting to ensure maximum freshness, flavor and ripeness. It’s been over thirty years since then, and I’ve poured that knowledge and care into Evolution Fresh. We seek to give more people access to cold-pressed juice (using HPP) and its benefits. Here are some of the things I’ve learned on my 30-year juicing journey:

1. Use in-season, local produce as much as possible. In markets featuring local produce, the fruits and vegetables are likely to have been harvested within the last 24 hours at the peak of ripeness. I like to use organic as much as possible. This helps provide you with all the benefits (flavor, texture, nutrition, etc.) freshness can offer. As we ease through September, I am most excited about local California Apples for my juice and smoothies.

2. Don’t be afraid of a little pulp. I like my vegetable juices with a bit of extra pulp. It feels more well-rounded and wholesome.

3. If you want more sweetness, add more fruit. I like my juice and smoothies on the less sweet side (generally with less fruit – no more than an apple sized portion), but using seasonal local organic fruit like an apple, pear, stone-fruit or berries can help provide wholesome and natural sweetness.

4. Try a smoothie in the morning and a juice in the afternoon. Juicing and blending are complementary – not oppositional. I typically do a smoothie (with veggies, fruits, superfoods and nut milk) in the morning, and a lighter veggie juice in the afternoon with leafy greens, cucumber, celery, carrots, beets, ginger, lemon and turmeric.

5. For smoothies, make your own nut milk. Nut milk can help cut down on the sweetness of your juice, and it may also offer additional impact on the smoothie’s nutrient profile! I prefer to sprout my nuts by soaking them 1 to 2 days before making nut milk. Here is a quick how-to:

  • Soak organic raw almonds for 8-12 hours at room temperature
  • Rinse
  • Blend water & almonds in roughly a 1:3 ratio for 1-2 minutes until almonds are ground very fine
  • Strain with cheesecloth or fine mesh strainer
  • Fiber can be dried and reused as flour
  • Another great cashew milk recipe can be found here

6. Don’t be afraid to juice the stalks and rinds! These may offer nutrients you don’t want to compost. For instance, just one cup of beet greens can provide a rich source of vitamins A (as beta-carotene) K, and C.

7. Stock your pantry with ‘superfoods’ so that you can add them to any juice or smoothie. I like to enhance my juices and smoothies with superfoods such as:

  • Cacao: it offers a hint of chocolate and bolsters the taste of the other ingredients in your smoothie
  • Maca: this root adds a touch of sweetness
  • Goji Berries & Chia: Try soaking them overnight before blending with your other ingredients

8. Experiment with variety. We’ve all heard that we should “eat the rainbow,” of vibrant fruits and vegetables. It can help to create variety in our diet and maintain health through various nutrients.

9. If you’re not sure where to begin, start simple. Here is a recipe to get you started.

10. A morning juice is the perfect way to start your day with self-love. For me, juicing is a self-nurturing, loving choice that I make everyday. I choose to be Loving with myself and share the joy I feel with others! I encourage you to juice freely and enjoy the “feel good” side effects!

A remarkable new study published in the International Journal of Rheumatic Diseases confirms that food is not only medicine, but sometimes superior to it. Medical researchers working out of Tabriz University of Medical Sciences, Tabriz, Iran, sought to investigate the effects of sesame seed supplementation on clinical signs and symptoms in patients with knee osteoarthritis.

Knee osteoarthritis is a form of degenerative joint disease or degenerative arthritis localized in the knee, and causes a variety of symptoms including pain, swelling, abnormal bone growth (which can result in bone spurs), disfigured cartilage and loss of motion, and it affects as many as 12,1 % of adults aged 60+, according to the CDC. Standard therapy involves the use of NSAID drugs, many of which have been linked both to internal bleeding and significantly increased risk of cardiac mortality, which is why the researchers sought out to look for “a complementary treatment to reduce complications and costs.”

The study took fifty patients with osteoarthritis of the knee, and divided them into two 25-patient groups: a sesame group, receiving 40 grams/day of powdered sesame seeds, and a standard drug therapy group, receiving two 500 mg doses of Tylenol twice a day along with 500 mg of glucosamine once daily. After two months of treatment, 22 patients in the sesame intervention group and 23 patients in the control group completed the study.

Considering that treatment was comprised of little over an ounce and one half of sesame seeds, the results were truly remarkable. As presented in Table 1 above, there was a significant difference in pain intensity between the two groups after treatment, with the sesame group seeing the largest drop from 9,5 before treatment to 3,5 after treatment, and the control group seeing a more modest drop from 9 before treatment to 7 after treatment. Additional measurements were taken using both the Knee Injury and Osteoarthritis Outcome Score (KOOS) Questionnaire and the Timed Up and Go (TUG) Test. Both tests revealed a similar degree of positive change in both treatment and control groups, when compared to baseline. [See table 2 and table 3 below].

Taken together, sesame was the clear winner. Not only was this food therapy superior in reducing the intensity of pain, but it was at least equal in effectiveness to Tylenol and glucosamine in both the KOOS and TUG tests. This, of course, was accomplished without the notorious side effects associated with Tylenol; to the contrary, sesame seed has a wide range of side benefits, which we covered recently in our article on sesame’s health benefits.

So, how much is 40 grams of sesame seed? A tablespoon of sesame seeds is approximately 9 grams. So, approximately 4 tablespoons will get you to what the study found to be a ‘clinical dose.’ Also, the researchers powdered the sesame seeds in order to enhance digestion. Remember, it is best to do this fresh with a mortar and pestle (first choice) or coffee grinder, also making sure that your seeds are raw, certified organic, and vetted to have not undergone gamma irradiation.

To truly appreciate the significance of this study, take a look at the growing body of toxicological research indicating that the unintended, adverse health effects of Tylenol (acetaminophen) far outweigh its purported benefits. Watermelon-Cucumber Hangover Cure

I haven’t been on a bender since well before I had kids. But sometimes I’ll get “overserved” at an event, or a new cocktail might leave me a bit more bleary-eyed than I’d like. That’s when I turn to this refreshing concoction. The melon and cucumber help to hydrate you, while the salt and mint aid in settling your stomach.

Watermelon-Cucumber Hangover Cure

Serves 4

Ingredients:

  • 2 cups (300g) cubed watermelon
  • 1⁄2 cup (75g) peeled and sliced cucumber, any variety
  • 2 tablespoons fresh lime juice
  • 1⁄4 teaspoon salt
  • 6 fresh mint leaves, plus more for garnish
  • 1 liter sparkling water
  • chilled agave nectar, light or dark (optional)
  • Ice, for serving

Preparation:

1. Combine the watermelon, cucumber, lime juice, salt, and mint in a blender and blend until smooth.

2. Strain the mixture through a fine-mesh sieve, pressing to release all the liquid.

3. Into a tall glass filled with ice, pour 1⁄2 cup (125ml) of the watermelon mixture and top with 1⁄2 cup (125ml) or more of the sparkling water. Stir in agave to taste, if using.

Sip slowly until you’ve recovered. Have another glass if you need it.

Store any remaining cooler covered in the refrigerator for up to 1 day. Stir well before drinking.

This Fungus Is Known As “The Mushroom Of Immortality” & “The King Of All Herbs”

DO NOT cut into the tree to retrieve the chaga, doing so could kill the tree. If retrieved correctly the chaga will continue to grow and will be ready to harvest every four years or so, and the tree will continue to thrive.cup-of-tea

To make the tea, cut a few small pieces off the chaga and place it in a pot. Pour in about 2 liters of filtered water and cover with a lid. Bring the pot to a boil for a minute or so, then reduce the heat to a simmer and keep the lid off. Let this simmer for about an hour and then add in another liter of water and continue to simmer with the lid on for another hour. This will make approximately 1 liter of chaga mushroom tea. It is a time consuming process, but I think that the amazing benefits justify the process, plus it tastes great! It tastes like a nice vanilla flavored black tea. You can add honey or sweetener if you wish, but I think it tastes surprisingly delicious on its own.

36 Foods That Help Detox and Cleanse Your Entire Body
